3 students warm up 400 crawl, 100 backstroke, 10×50 crawl sprints accelerating at 15 sec interval, 6×25 butterfly sprints, 6×25 backstroke mechanics, the last 25 sprint crawl taking over the pool, splashing it up. - 2kg Mediterranean (fresh!) sardines – about 100 – scale wash gut, behead with sharp kitchen scissors
- Heat oven to 450°C
- Spread a metal oven pan with 1kg sea salt evenly
- Lay the sardines one by one on the salt, avoid them touching each other
- Sprinkle with Kaffir lime leaves
- Bake for 15 minutes
