600 gr buttersquash – courgettes or zuccinis, diced 1tbsp olive oil 3 minced cloves of garlic
1 tsp fresh ginger finely chopped1 small yellow onion, thinly sliced 1 lemon, squeezed 1tsp light soy sauce salt, peper
Heat oil in a frying pan, add courgettes, onion, ginger, garlic and cook for 2 min at hight heat stirring frequently; lower heat, pour in lemon juice and cover to simmer for 15 min on low heat.
Add salt, pepper, light soy sauce and keep on low heat until tender.
